All the recipes featured are my own. Some date back to my time as a Home Economics teacher while more recent dishes are inspired by my daughter’s love of fajitas, wraps and all manner of aromatic spicy food. I’m very conscious of healthy eating so in some cases like my lasagne you’ll notice variations from the regular recipe in order to produce a low GI, high protein food. When it comes to desserts however, I’m with Nina Simone who sang ‘I want a little sugar in my bowl’.
A little of what you fancy won’t kill you if taken in moderation and there’s always fruit salad for healthy eating days. Number one on my to-do list is to add extra dishes to the ‘quick and easy’ section each month, as I know you all lead very busy lives.
